Do you participate in meatless Mondays? I personally don’t have a designated day to go “meatless” each week; however, I do strive to vary my protein routine and I even enjoy plant-based protein sources on occasion. If you feel like you are stuck in a rut eating the same protein foods each week, there is no better time than now to venture out and try something new! Due to recent slowdowns and shutdowns of some meat processing plants, estimates(PDF) suggest that meat supplied to grocery stores could decrease by up to 30% in the next month, and at the same time, the cost of meat could increase by up to 20%.
This week, I tried a new way of preparing a plant-based source of protein: I made crispy tofu in the air fryer. Step by step directions are listed below. Air Fryer Crispy Tofu
Cut tofu into 1” cubes. Combine two tablespoons each soy sauce, rice vinegar and sesame or canola oil. Marinate tofu in the sauce mixture for 10 minutes. Drain excess liquid from the tofu and toss with three tablespoons of cornstarch.
Cook in the air fryer at 370°F for 18 minutes. Serve with stir fry vegetables and rice, if desired.
